This autumnal vegetarian centerpiece is here to make the most out of a bevy of squash -- both sweet winter squash and tender zucchini. Thinly sliced, coated with shallots, garlic and rosemary and bound together by sharp Cheddar, the squash is piled high on top of the nutty crust and neatly wrapped to form a galette. Something magical happens in the oven: The heap of stiff squash becomes tender and custardy while the Cheddary, pepita-speckled pastry develops an irresistible crumb and a toasty flavor.
